Question about Nikon D80 with black and white display and Photoshop?

I recently bought a Nikon D80 to upgrade my D70s. Now I have the ability to shoot black and white in-camera. I've recently started shooting only RAW images and I have been shooting in black and white mode on the D80 and save RAW images. My question is if my images are recorded in black and white in the camera, why open as color images in Photoshop?

Black and White is a domestic processing mode camer. When saved as RAW, saving only what the sensor records that gives you total control of how to process the image. Process the image on the computer instead of letting the camera make all the decisions. Also, do not feature black and white camera is as good as what you can do on the computer. It is enough to the green channel and desaturated to leave her flat and lifeless.
