Ingredients
Marinated Cod
200 g fillet of seabass
1 teaspoon turmeric powder
1 tablespoon coconut milk
1 teaspoon soy sauce
1 teaspoon honey
Green Mango Relish
200 g green mangoes, peeled and julienne
30 g carrot, peeled and julienne
30 g shallots, finely sliced
1 bird chile, finely chopped
1 tablespoon soy sauce
1 tablespoon honey
1 tablespoon lime juice
Cilantro leaves for garnish
Method
Marinated Cod
Preheat oven to 100C. Marinate the sea bass with turmeric, coconut milk, soy sauce and honey, then bake 10 minutes or until it is half cooked. Set aside.
Green Mango Relish
To prepare dressing, whisk soy sauce, honey, lemon juice and pepper in a bowl until well blended. Add all remaining ingredients to taste the dish with dressing. Pull gently until evenly mixed.
To Serve
Arrange the baked sea bass in the middle of the plate, putting green mango sauce on top of the fish and sprinkle with cilantro.
