Tasty recipe for cooking snapper fish when camping?

Hi ya all. My girlfriend and I are soon to make a sea kayaking trip around our beaches of Coromandel in New Zealand, where we intend to fish for snapper fish for some of our meals. What is a simple and tasty recipe to use outdoor camping on a beach?

Roll 'em in flour, paprika and salt, and fry in oil. For a little more elaborate: http://www.bigbendsportsman.com/receipes/snapper.htm Personally, I can not imagine eating any other way than snapper spicy and well cooked. They really do not know how anything else.
